Ingredients
  1. 8 - 10 potatoes, peeled and diced
  2. 1 onion diced
  3. 3 to 5 cups of water
  4. 4 chicken bouillon cubes
  5. 1/2 tsp. garlic, diced
  6. 1/3 cup butter
  7. 12 oz can evaporated milk
Instructions
  1. Place potatoes, diced onion, water, bouillon cubes, butter and garlic in Instant Pot; stir.
  2. Cover, select Manual and adjust time to 20 minutes.
  3. Once finished turn valve to venting to release pressure.
  4. Add evaporated milk.
  5. Cover, set valve to sealing, select manual and set timer for 5 minutes.
Notes
  1. Serve with shredded cheese, bacon and green onions.

Peanut Butter Granola

Ingredients
  1. 1/4 cup creamy peanut butter
  2. 1/4 cup honey
  3. 1/4 tsp cinnamon
  4. 1/2 tsp vanilla
  5. 1 cup old fashioned oats (not quick oats)
  6. 1/2 cup chopped pecans
Instructions
  1. Preheat oven to 350 degrees
  2. Lightly spray cookie sheet with Pam
  3. Combine peanut butter & honey
  4. Microwave for 20 seconds or until peanut butter is melted
  5. Stir in cinnamon & vanilla
  6. Add oats and pecans stirring well to cover oats completely
  7. Spread on cookie sheet
  8. Bake 10-15 minutes
  9. Remove from oven and cool completely
